A 20-Minute Lemon Herb Pasta for Busy Nights

Some nights, dinner needs to be uncomplicated. This is the meal I make when I want something that tastes like I tried, without actually having the energy to. Bright, lemony, herby, and on the table in twenty minutes.
What you'll need
- 12 oz of your favorite long pasta
- 2 tablespoons good olive oil
- 2 cloves garlic, thinly sliced
- Zest and juice of 1 lemon
- A big handful of fresh herbs (parsley, basil, whatever you have)
- Parmesan and black pepper to finish
How it comes together
Boil the pasta in well-salted water. While it cooks, warm the olive oil and gently soften the garlic — don't rush it or let it brown. Reserve a cup of pasta water before you drain.
Toss the pasta with the garlic oil, lemon, a splash of the starchy pasta water, and the herbs. The water is what makes it silky, so don't skip it.
The best weeknight meals aren't about impressing anyone. They're about feeding the people you love something honest.
Finish with parmesan, plenty of black pepper, and an extra squeeze of lemon if you like it bright. That's it. Sit down, breathe, enjoy.
